Modified Starch is complex carbohydrate mixture resulting from treatment of starch in aqueous slurry with small amounts of an acidifying substance, such as aluminum sulfate, generally at elevated temperature and pressure. The process is usually continuous with the time of treatment very short. Degree of hydrolysis is usually determined by measurement of viscosity and controlled by rate of the slurry through the reactor, temperature, and acidity.
